Oink serves up pork cooked sans oil, and delivered in boxes made of sugarcane waste

A 10-year-old leans against the bright yellow and grey counter at Oink. “I’ll have pork ribs,” he grandly announces. It’s barely been four days since this kiosk opened shutters, but it already has its regulars, most of whom know the menu by heart. “We start at 12.30 in the afternoon and by 3 we are sold out,” says Shanthala T Medappa, who started it with Rohini Chandrakumar.

As the name suggests, Oink dishes out everything pork-based. The menu has pandi curry, pork ribs (with delicious caramelised onion), green chilli pork sausage, porky pao, pork hot dog, chicken hot dog and wedges (the sole vegetarian entry on the menu). And you can end your meal with a piping cup of fragrant Coorg coffee, a blend of Robusta and Arabica.

“I am from Coorg and everytime I entertained guests and cooked pandi curry, it would be a hit. My friends asked me to start selling it. There was a large demand and I couldn’t supply enough from home. Rohini and I were also taking about how there are no joints that cater only pork. So we started this place,” says Shanthala.

Two months were spent training the staff — two in the kitchen and two in the kiosk. “While Shanthala handles the kitchen, I do the tasting and give feedback,” laughs Rohini who also takes care of operations and marketing.

They make 10 kilograms of each dish. The pandi curry is slow cooked and it takes four hours and the ribs take around two and a half hours. The recipes are largely Coorg-inspired. “We don’t use a drop of oil. Everything, except the wedges, is cooked in its own fat,” adds Shanthala. The pork comes from Bangalore. “We buy 140 kilograms every week. Our sausages are custom made in Pune,” says Rohini.

They get queries from vegetarians who want the same dishes recreated with mock meat. “But we don’t want to dilute the menu. We just want to keep it simple and do what we do really well,” says Shanthala. “Starting something like this, to me, was a calculated risk as are cutting out a lot of people. But Shathala was confident from the start,” says Rohini.

Their clientèle is a mixed crowd of college students, sportspersons who stop by to grab a quick protein-filled snack before a match, and hungry passers-by. “The sweetest compliment we received was when a granddaughter picked up ribs for her grandmom. She then sent a video of her grandmother saying, ‘In all my 88 years this is the best pork I’ve eaten’,” says Rohini, showing us the video.

“We try to be eco-friendly. We request our clients to send their own boxes. Our takeaway boxes are made of sugarcane waste, and we don’t use any plastic,” adds Shantala.

IPL 2018, MI vs KKR: Robin Uthappa joins elite group, becomes sixth player to reach 4000-run mark

Kolkata Knight Riders’ Robin Uthappa reached a memorable milestone with his innings against the Mumbai Indians, becoming just the sixth player in the history of the IPL to cross the 4000-run mark. He reached the landmark after hitting a six off Markande in the eighth over of the innings.

The Kolkata Knight Riders lost out to the Mumbai Indians in a hard-fought encounter at the Wankhede Stadium on Sunday, falling short by 13 runs. It was the home side that batted first, putting up a strong total of 181/4 in extremely challenging conditions with valuable contributions from Suryakumar Yadav, Evin Lewis and Hardik Pandya, with Yadav scoring a half-century opening the innings.

In the chase, Robin Uthappa survived an early scare to reach the half-century mark himself and with Nitish Rana, he forged a valuable partnership that looked to take his team to the total. However, he gave away his wicket to Mayank Markande after scoring 54 off 35 and from there on, his side lost the needed momentum and stumbled in their pursuit of the target.

However, Uthappa reached a memorable milestone with this particular innings, becoming just the sixth player in the history of the IPL to cross the 4000-run mark. He reached the landmark after hitting a six off Markande in the eighth over of the innings and was 17 runs short of the mark at the start of his knock.

With this latest feat, he enters an elite club that features four Indian superstars, including Virat Kohli, and an Australian dynamo.They are Virat Kohli (4775 runs), Suresh Raina (4801 runs), Rohit Sharma (4438 runs), Gautam Gambhir (4217 runs) and David Warner (4014 runs).

Uthappa had joined KKR in 2014 and was an important member of the Knight Riders side that won its second IPL trophy.

The International Association for Science and Information on Coffee is Coming to Portland

A nonprofit organization that organizes a biennial conference on the science and technology of coffee throughout the coffee value chain, the Association for Science and Information on Coffee (ASIC) is hosting its conference in the United States this year for the first time since 1991.

The 27th conference of the ASIC will be held Sept. 16-20 in Portland, Oregon, at the Oregon Convention Center in collaboration with the Specialty Coffee Association. The conference — which most recently gathered more than 400 scientists from 53 countries in Kunming, China, in 2016 — was last held in the U.S. in San Francisco.

“SCA is proud to host the ASIC conference this year in Portland, Oregon. ASIC is the world’s foremost coffee science institution, and this conference is the key place for sharing new scientific breakthroughs on coffee,” Peter Giuliano, chief research officer for the SCA, told Daily Coffee News. “Coffee science is a key part of SCA’s research mission, and we’re proud to have developed a deep collaboration with ASIC, and to share this learning opportunity with our members.”

Chahan Yeretzian, who currently serves on the board of both SCA and ASIC, told Daily Coffee News that the two organizations have a shared goal to build bridges connecting industry and academia, along with a belief that facilitating constructive dialogue will lead to continued success and ensure the readiness of the coffee industry to recognize and address future challenges.

“The Specialty Coffee Association represents thousands of coffee professionals, from producers to baristas, all over the world, so it made sense for both of these global organizations, and leaders in their respective fields, join forces in organizing the upcoming ASIC conference,” said Yeretzian. “Portland, a booming coffee city known for its bridges, seemed to be a natural choice for a location to host the conference in the U.S.”

The conference features presentations with cutting-edge information and advanced coffee science, as well as exhibits and social events. ASIC is accepting abstract submissions through June 3 for papers to be presented on specific program topics, such as chemistry, agronomy and pest management, genomics, sustainability, physiology, coffee and health, and sensory science.

“Future success for the coffee industry will rest on solid science, technology, and innovation in breeding, post-harvest technologies, roasting, grinding, packaging, extraction, consumer understanding, health, climate change, and genomics,” said Yeretzian. “Research is moving into the spotlight, as industry leaders are becoming aware that their future depends on mastering the technologies and chemistry of coffee. We are also increasingly interested in better understanding the needs and challenges of the industry, in order to orient the efforts and resources — and connect those in the industry who will champion the implementation — of scientific insight into successful and profitable applications.”

Obituary – Cherumandanda Kamini Joyappa

Cherumandanda Kamini Joyappa (Mandachanda), wife of C.K. Joyappa and a resident of V.V. Mohalla in city, passed away at her native place Parane in Kodagu on Sunday. She was 77.

She leaves behind her husband, two sons, a daughter, daughters-in-law, grandchildren and a host of relatives and friends.

Last rites were performed in Kodagu yesterday, according to family sources.
