Akki Roti with eggs and greens

The Head of Creative Culinary at ph4 Food and Beverages, which runs The Permit Room and Toit, talks about learning from the expert in traditional Coorgi cuisine: his mother.

Chefs don’t usually get a lot of time at home. I live in a family home in Bengaluru so I am spending a lot of time with my parents. It has given us the time to bond better.

At home, it is traditional Coorgi food that we are cooking. My mom is the expert at making it. I am helping her out, brushing up (my skills) and being hands-on like never before.

My father cooks once in a while. He has his signature dishes, like pork ribs. He has not had the time and we are not getting things very easily. So, we’re trying to cook with what we have and what we saved, instead of trying to go out and buy things.

The most famous staple Coorgi dish is a pork dish called pandi curry which I have been making for a while now. There are also a lot of rice accompaniments that we do that need a little bit of experience to perfect.

There is a flat rice cake called paputtu. It is like idli, but made with coarser grains of broken rice and topped off with freshly grated coconut. We made that for breakfast. Then there is a rice ball, called kadambuttu, which we are making at home.

We had preserved some small mangoes ( sakkare guthi variety) in the freezer. We do that as a family; we get them in season and we keep them for the whole year. So, we made a mango curry with some mustard, curry leaves (just a basic tadka ) with a bit of jaggery and some spices.

Once in a while, I whip up something with what we have at home. The other day I had a packet of instant noodles; I think it was a very mellow-flavoured one. I had some elk sausage in the fridge so that added some depth to the noodles. I had done it once before; it turns out great. I think a friend got the sausages for me from Germany a long time ago. That stuff is nuclear-war proof. Nothing happens to it (laughs).

Ingredients

Eggs 2 nos

Cooked rice (day-old is also okay) 1 cup

Rice flour 1/2 cup

Salt to taste

Spinach (can use any local greens) 1/4 bunch

Onion, 1/2 sliced

Dried red chilli 1 nos

A pinch of mustard

Oil 2 table spoons

Chopped cashews 5 nos

Curry leaves a spring

A pinch of mustard

Ghee 2 teaspoons

Preparation

1.For the akki roti : Mix the cooked rice and rice flour (in increments) to make an evenly mixed dough where you can still lightly see the rice grains.

2.Make small rotis using a roti press and cook on a tava and finish on open fire to get the char.

3.For sauteed greens: Heat oil in the pan, saute mustard, onions and chilly. Add the greens, cook till done.

4.To temper: Heat the ghee in a small pan, add the mustard, red chilli and cashews. Heat till cashews turn slightly brown and crispy. Add the Curry leaves and finish.

5.Finally, Make a soft scramble with the eggs, once all the other components are ready. Assemble the greens and scramble on the akki roti and garnish with the cashew tempering.

Regarding work, we had just finished trials and were about to launch a new menu at The Permit Room and then this happened. So, what I am doing right now is spending the time documenting. As chefs, we don’t like to really sit down and document recipes but I have been getting more time, so that is what I have been focusing on.

A lot of focus has also been on taking care of the staff, which I feel is very important.

Overall, our company (pH4 Food and Beverages) has about 450 employees. In Bengaluru, The Permit Room has about 50 employees who stay in staff housing and Toit, owned by the same company, has over 100 employees.

The staff stay in accommodation that the company provides. We are cooking meals (rice, dal and vegetables with egg once a week) for them at the restaurant everyday and delivering it. They are not hungry, if nothing else, and they have a roof over their heads. [Ensuring] this has been a major responsibility and task.

The Scotland of India has been blooming with tourists, with a surge in rainfall. Coorg sees a spike in tourism, post the monsoon season begins. With a hefty rainfall, the city has been spiking with tourism. The CHiklihole dam in the Kushalnagara of Coorg district has raised to fame with its beautiful half-moon shape, tagging along with the name ‘mini-Niagara’.

Though a dam, the water flows along a half-moon shape in the dam and attracts visitors. Each and every tourist place in Coorg resides with silence and quietness. The water flow along the reservoir is very peaceful, besides the noise created by the tourists and the birds chirping along the dam.

The Chiklihole Dam fills up every monsoon, and the dam attracts thousands of tourists every year. Tourists from far away places come to see this beautiful water flow in the dam.

How to reach?

Chiklihole Dam is about 26km from the district place Madikeri. There are no bus facilities, however, one can travel to Suntikoppa in their own vehicle and later Book an auto or a jeep until the dam. This dam is constructed in the Meenukolli reserved forest and provides water to the villages of Kushalnagara and Piriyapattana.

The breeze along the bridge beside the dam will make you dance to the waves of the dam. Meanwhile, the dam fills up during monsoon and calls the visitors. 

Tourists can also consider visiting Abbifalls, Abhyat Mangala Falls, Mallalli Falls and Iruppu Falls in the surrounding. Coorg always lives up to its name – Scotland of India, be it during the monsoon and summer.

Akhilesh Yadav Takes Time Off To Visit Kodagu, Mysuru

After attending the Opposition unity meeting at Taj West End, Bengaluru, on July 18, former Uttar Pradesh (UP) Chief Minister (CM) and Samajwadi Party leader Akhilesh Yadav headed to Kodagu to stay at Taj Madikeri Resort & Spa, Coorg in Monnangeri village, near Galibeedu.

Interacting with a few resort staff and the guests for a few moments, Akhilesh said that he had come to Kodagu a couple of times when he was a student at Sri Jayachamarajendra College of Engineering (SJCE) (now JSS Science and Technology University) and had visited Madikeri to witness the night-long Dasara procession.

Before heading to Kodagu, Akhilesh had a stopover in Mandya where he rested at a private hotel and he met his old friends and classmates.

After his night’s stay in Kodagu, the Samajwadi Party leader took time yesterday morning to visit General Thimayya Museum at Madikeri which celebrates the life of former Army Chief General Kodandera Subayya Thimayya, housing a variety of antique weaponry and war relics.

Welcoming the former UP CM, Museum Manager Subedar Major Gowdanda Thimmaiah, took him around the Museum and explained to him how ‘Sunny Side,’ the erstwhile ancestral house of General Thimayya, who served as the Chief of Army Staff from 1957 to 1961, has been renovated and converted into the Museum.

Accompanied by party National Spokesperson Rajendra Chowdhuri, Akhilesh Yadav went to every section of the Museum and was curious to know the tradition of warriors and how the Kodagu district became a nurturing place for Field Marshal K.M. Cariappa, General Thimayya and other numerous Lieutenant Generals, Brigadiers, Majors and the other Defence Services officers.

The Kodagu Police had provided tight security to the visiting VIP and media persons were not allowed inside the Museum during his visit. Only one camera person was allowed to click photos. Here too, Akhilesh spoke about his warm association with Madikeri and Mysuru.

“I studied in a Military School and read about General Thimayya. I recently came to know about this historic and well-maintained Museum and I had made up my mind to visit Madikeri. I bow to the celebrated General and the soil of Kodagu,” he said.

Akhilesh returned to Mysuru where he caught up with a few of his friends and classmates. At SJCE, between 1990 and 1994, Akhilesh studied Civil Engineering before proceeding to Australia for MS in Environmental Engineering.

His classmate Dashrath Rai and others accompanied Akhilesh to Suttur Mutt where the former UP CM took the blessings of Sri Shivarathri Deshikendra Swamiji. The Swamiji felicitated Akhilesh and presented a memento.

Glass Bridge In Kodagu Offers Thrilling Encounter With Nature

Among the multiple famed tourist attractions in the hill station of Kodagu — a captivating destination for travellers from far and wide throughout the year — is a new must-visit place, a brand-new glass skywalk bridge.

The glass skywalk bridge in the district is the second such attraction in South India, the first one being at Wayanad in Kerala at 900 Kandi Eco Park. This remarkable Glass Skywalk Bridge of Kodagu is nestled amidst the forests and hills of the Western Ghats, attracting tourists like a magnet.

The bridge, standing approximately 78 feet tall, with a length of about 32 metres and a width of 2 metres, has been attracting tourists to the ‘Pappy’s Bridge of Coorg’ at Udoth Motte near Madikeri on the Madikeri-Bhagamandala Road. This bridge, with a capacity to support around 5 tonnes, can accommodate up to 40 to 50 individuals at once, providing them with an opportunity to immerse themselves in the beauty of nature.

DC urges resorts, homestays in Kodagu to upload details on tourism websites

The list of homestays and resorts in Kodagu, which are run legally getting all the clearances from government agencies, should be made available on tourism-related websites for the benefit of tourists.

This message was conveyed at a meeting of the associations of hotels, restaurants, resorts, and homestays in Madikeri. The meeting was chaired by Deputy Commissioner Venkataraja who suggested uploading information on registered homestays and resorts operated in the district.

Superintendent of Police K. Ramarajan said the police have kept a close vigil for controlling narcotics and advised resorts not to engage in illegal activities. The police will act tough if they comes across such activities being encouraged on their properties, he cautioned. Problems can be brought to the notice of the police immediately by calling 112, he advised.

Kodagu Homestays’ Association general secretary Monti Ganesh suggested simplifying the registration process for homestays. Kodagu has about 200 registered homestays. If the process is simplified, more homestays will voluntarily register, he felt. He also suggested establishing tourist information centres and more public toilets besides giving importance to hygiene in tourist spots.

Hotel Owners’ Association president Nagendra Prasad said the district administration must consider giving priority to easing parking issues, which aggravate during weekends when tourist footfall goes up. He suggested establishing more facilities in tourist spots in view of the rise in tourism revenue.

Kodagu Chamber of Commerce and Industry general secretary Ambekallu Naveen said tourists engage in cooking while on visit to Kodagu. There has to be designated places for cooking for tourists, he said. Honey and spices are being faked in the market and this has to be checked for safeguarding the identity of these products.

Somwarpet taluk homestay association president C.K. Rohit said there are no display boards with useful information for tourists on the way to Kote Betta and steps must be taken to install information boards on the route for the benefit of tourists. He sought a ropeway at Mallalli waterfalls and a hanging bridge to Pushpagiri hills.
